Spicy Orange Chicken

The Junior League of Elmira (now the Junior League of Greater Elmira Corning) is a non-profit organization committed to developing women's potential, thereby improving the community. It published a cookbook back in 1983 to raise money. The recipes came in a binder with tabbed sections, a useful format I'm surprised is not more popular. Although this cookbook is no longer being published, it can be found in used book shops and on-line. Here's one of its recipes.

SPICY ORANGE CHICKEN

Serves 4

2 whole chicken breasts, boned and cut into strips

1 Tbsp. cornstarch

2 tsp. ginger

Red pepper flakes to taste

Peanut oil

1 onion, cut into 1-inch pieces

¼ cup orange zest (rind, cut into thin strips)

2 Tbsp. soy sauce

3 Tbsp. orange juice

1 tsp. sugar

1 tsp. vinegar

½ cup slivered almonds, cashews or peanuts

 

Combine chicken, cornstarch, ginger, and red pepper. In wok, stir-fry chicken mixture in peanut oil for approximately 3 minutes. Add onions and orange zest. Combine soy sauce, orange juice, sugar and vinegar. Add to wok. Cook for 2 minutes. Add nutmeats. Serve hot with rice.
